We love to order restaurant Mexican Street Corn but have been so happy to discover that we can make it at home and it can taste just as good!

It’s quick and easy to make! My version of Mexican street corn doesn’t require a hot grill and multiple ingredients.

Ingredients

– Corn – Red Onion – Queso Fresco Cheese – Chiptotle Mayo

STEP 1

Roast corn in a large skillet over medium-high heat until slightly browned.

STEP 2

Add red onion and sauté for a couple of minutes until softened.

STEP 3

Add chipotle mayo and stir to combine.

STEP 4

Top with queso fresco and chopped cilantro, and enjoy!
