Step #1: Mix together the cream of chicken with herbs soup, the sour cream (or Greek yogurt), a handful of shredded cheese (Pepper jack is yummy in this!), a handful of onions (White onions, scallions/green onions, or a mixture of both gives great flavor.), and chicken. Sometimes, I add a splash of milk and a dash of pepper - totally up to you.
Step #2: Layer the bottom of your baking dish with tortilla chips. Then spread a layer of your creamy mixture on top. Then repeat.
Step #3: Top the layers with a different kind of shredded cheese - we used a fiesta blend here.
Step #4: Bake at 375 degrees for approximately 30 minutes. Sometimes I broil the top for a couple minutes at the end.
Step #5: Serve with some fun toppings: salsa, cilantro, a spoonful of sour cream, more green onion, anything goes.
