Creamy Chicken Tortilla Chip Casserole
Do you ever find yourself with three or four different open bags of tortilla chips? Maybe there’s just a handful of broken chips left in the bottom of each bag? If so, this Creamy Chicken Tortilla Chip Casserole is gonna be the perfect answer for what to do with those bottom-of-the-bag chips you’ve got left on hand.
Ingredients:
- a can of Campbell’s Cream of Chicken with Herbs Soup
- one small container of sour cream – Sometimes we use Greek yogurt instead.
- shredded cheeses of different kinds
- rotisserie chicken or shredded chicken
- onions – A variety of different ones is fun here.
- tortilla chips
- toppings such as salsa, cilantro, etc.
Step-by-Step Directions:
Step #1: Mix together the cream of chicken with herbs soup, the sour cream (or Greek yogurt), a handful of shredded cheese (Pepper jack is yummy in this!), a handful of onions (White onions, scallions/green onions, or a mixture of both gives great flavor.), and chicken. Sometimes, I add a splash of milk and a dash of pepper – totally up to you.

Step #2: Layer the bottom of your baking dish with tortilla chips. Then spread a layer of your creamy mixture on top. Then repeat.
Step #3: Top the layers with a different kind of shredded cheese – we used a fiesta blend here.
Step #4: Bake at 375 degrees for approximately 30 minutes. Sometimes I broil the top for a couple minutes at the end.
Step #5: Serve with some fun toppings: salsa, cilantro, a spoonful of sour cream, more green onion, anything goes.
