Creamy Italian Soup
We have seen different variations of this Creamy Italian Soup, and this post includes the recipe for how our family enjoys making it.

Soup Ingredients:
- 1 lb. of ground pork – We usually use mild, but would your family prefer spicy?
- 1 onion, diced
- 2 cloves of garlic, chopped
- 1/2 teaspoon of red pepper flakes, optional
- 4 cups of chicken broth – We typically opt for a low-sodium version.
- 14.5 oz. can of petite diced tomatoes
- 8 oz. pasta – Something like Macaroni, Ditalini, etc. works well.
- 1 teaspoon of Italian Seasoning
- 1/2 cup of grated parmesan
- 4 oz. of cream cheese
- 1/2 cup of heavy cream
- salt and pepper, to taste

Directions for How to Make this Creamy Sausage Soup:
- In a large skillet, brown the sausage and onion – making sure to break the sausage apart.
- Then add the garlic and [optional] red pepper flakes.
- Next, add the chicken broth, tomatoes, pasta, and Italian seasoning.
- Bring everything to a boil and then reduce the heat to a simmer until the pasta is cooked.
- Incorporate the parmesan cheese, cream cheese, and heavy cream.
