  • One Block of Cream Cheese – No need to be softened, unless you’re in a hurry and need the Crock Pot to serve more as a warmer than as a slow cooker. I like to use full-fat cream cheese. I think it gives the best flavor and texture, but I’ve used reduced-fat cream cheese before and other people didn’t seem to notice a difference.
  • One Can of Chili – Whether you choose chili with beans or chili without beans is entirely up to you. That is more or less a regional conversation, and I will not wade into that water. You can also choose canned chili that includes diced green chilies, if you’d like. Or try a can of vegetarian chili! You have many, many options when it comes to type of chili.

How to Make Homemade Chili Cheese Dip

This easy chili cheese dip is truly a dump-it-and-forget-it recipe – perfect for game days and busy weekends.

  1. Pour the can of chili into the Crock Pot and then place the block of cream cheese on top of the chili.
  2. Set the Crock Pot to a low heat setting for two hours, stirring regularly. 
  3. Enjoy with your favorite chip of choice!

Move the leftover dip into an airtight container or lidded baking dish, then place it in the fridge.

  • If your day is full and you need to pull together these cheesy dip in a matter of minutes, start with softened cream cheese. With the cream cheese already at room temperature, it takes next to no time to heat the dip through and stir it together.

  • Hot dip is a favorite during the fall months, and so is chili! If you happen to have leftover chili in the fridge, by all means, use that! A can of Hormel chili is great for making a last minute appetizer, but two cups of leftover homemade chili is going to take your dip to the next level.
  • The amounts listed here fit a mini Crock Pot. If you need to fill more tummies, double or triple the recipe and throw it in a full-sized Crock Pot. Just be sure to give it a stir regularly while it’s melting and combining!

The above basic recipe will give you a flavorful hot dip, but don’t stop there!

There are toppings to try, cheese to change! Here are some ideas to get you started.

  • Toppings – A sprinkle of fresh veggies over the top of the chili add a pop of flavor and just a bit of nutrition, haha! Try fresh cilantro, sliced green onions, fresh tomatoes, black olives, red onion, avocado slices, or diced chilies.
  • Cream Cheese – There are all sorts of cream cheese flavors out there! Why not try this easy dip recipe with jalapeno, chive, or garden vegetable cream cheese?
  • Other Cheeses – The cream cheese adds, well, creaminess. Don’t substitute the cream cheese, but if you were to double this recipe, you could replace one block of cream cheese with a different block of cheese. Pepper jack cheese, sharp cheddar cheese, Colby Jack, Monterey Jack, and even Velveeta cheese are all great options. Because these cheeses take longer to melt, either grate your own cheese or purchase pre-shredded cheese.
  • Meats – Boost the protein with browned ground beef crumbles or bacon bits.
  • Hot Sauce – For a crowd of heat-lovers, a shake or two of hot sauce is always a good choice.
