Why You’ll Love These Fudgy Brownie Bites
- They’re the perfect texture! These crinkly top brownie bites have a moist and fudgy interior, with a perfectly crackly crust. It’s particularly perfect for people who love the edge pieces of typical square brownies. But don’t worry, center-piece lovers. Inside that crinkly crust is an abundance of moist crumbs.
- They’re the perfect size! Sometimes, a bite or two of that sweet chocolate flavor is all you need. Brownie bites are also a great option for backyard barbeques or potlucks. There are always so many desserts, and small portion sizes means that you can give each one a taste.
- They’re simple to make! – Nothing against boxed brownie mixes, but this homemade recipe truly is so simple to put together. It only requires six ingredients – things you likely already have on hand!
Ingredients You’ll Need To Make My Mini Brownie Bites Recipe
You don’t need many ingredients to bake brownie bites! You probably have most of them in your kitchen already.
- 1 Stick of Unsalted Butter – You can’t have moist, fudgy little brownies without butter! To soften your butter, set it out on the counter overnight. If you forget, don’t worry – just pour some boiling water into a bowl, let it sit for a bit, and then pour out the water and set the bowl upside down over your butter. The residual heat will soften that butter right up!
- 1/2 Teaspoon of Salt – If you only have salted butter in your fridge, you can skip this additional salt.
- 1 Cup of Semisweet Chocolate Chips – I love semisweet chocolate for baking! It’s sweet without being too rich, like milk chocolate can often be. You won’t be using a double boiler to melt the chocolate, but will instead just be pouring the chocolate chips into melted butter. So if you can, opt for mini chocolate chips. They’ll melt faster.
- 3 Eggs – These eggs will be your leavening agent in this easy brownie recipe. They’ll incorporate better and whisk up faster if you let them come to room temperature before using them.
- 1 Cup of White Sugar – This adds the perfect sweetness to these easy homemade brownies. If you like extra fudgy brownies, you can swap out 1/4 cup of white sugar for brown sugar.
- 1 Cup of Flour – Regular all-purpose flour works great for this.
How To Make Decadent Brownie Bites
I love this homemade brownie recipe because it’s straightforward and simple.
No fussy steps to melt the chocolate, and you only dirty up one saucepan and one bowl!
- Begin by pre-heating the oven to 350 degrees Fahrenheit
- After preheating the oven and prepping a mini muffin tin with cooking spray, melt the butter in a medium saucepan over medium heat.
- Take the butter off the heat. Let it cool for 5 minutes, and then add the chocolate chips to the (still hot!) butter. Let the chocolate sit in the butter and slowly melt.
- While the chocolate chips are melting, combine the eggs and sugar in a medium bowl. Mix them together well using an electric mixer.
- Whisk the melted chocolate and butter together until smooth, then add them to the egg mixture – and keep whisking!
- Add the flour and fold gently to incorporate with the wet ingredients. This is the stage where it’s important not to overmix!
- Fill each cup of the muffin tins 3/4 of the way full.
- Bake for 15-20 minutes until a toothpick comes out clean, them let them cool and enjoy!
How To Store Leftover Bite-Sized Brownies
Do you have leftovers on your hands? No problem!
These bite size brownies stay fudgy and fresh for a week on the countertop if you store them in an airtight container.
They also freeze very well, making them a great option for a make-ahead favorite dessert.
Wrap them in aluminum foil and place them in a freezer bag.
Top Tips For Perfect Two-Bite Brownies
- These mini brownies taste best if you let the butter start to brown a little! Brown butter has a flavor profile all it’s own. It’s somewhat nutty, and let’s face it – nuts taste good in brownies. After you’ve melted the butter, stir it regularly and keep it on the heat. You’ll know it’s perfect when the butter start to form brown, crispy pieces and you smell that lovely nutty aroma.
- Your eggs are your leavening agent! When you’re whisking the eggs and sugar together, really whisk them well. Get some air in there. Whisk until the mixture lightens up a few shades to a pale yellow – that’s how you’ll know you’ve got enough air worked in!
- Filling the mini muffin pan can be tricky, since the muffin cups are such a small size. I’m all for using a small spoon and accepting some level of mess, but this is one instance where dirtying up some additional kitchen gear might be worth it. Using a piping bag to fill the muffin tin really helps with uniformity and tidiness.
- If you make these chewy brownie bites and then decide you want to use this recipe to make a more traditional pan of brownies, go for it! This recipe makes enough brownie batter for an 8×8 pan.
Twists On This Mini Brownie Bites Recipe
Brownies are the best because they are endlessly customizable!
Once you’ve got this recipe down, here are some twists you can try.
- Chocolate Chips – Sure, you already used chocolate chips in the recipe, but they’re melted now. How about involving some unmelted chocolate chips? When you fold in the flour, try adding a cup of mini chocolate chips to the batter.
- Nuts – There’s just something about a nutty brownie! Try adding a cup of chopped pecans, walnuts, or almonds.
- Peanut Butter – Peanut butter and chocolate are a match made in heaven. The great thing about brownie bites is that they are the perfect size to encompass one mini Reese’s peanut butter cup inside. Just add half your batter, press in the peanut butter cup, and then add the rest of the batter on top.
