Ingredients You’ll Need To Make S’mores Rice Krispie Treats
With all the flavors of traditional s’mores, you’ll love how this no-bake recipe takes simple ingredients and turns them into delicious treats!
- 1 Stick of Butter – A full stick of unsalted butter keeps these S’mores bars gooey, even the day after cooking them! If you only have salted butter in your fridge, that’s fine. Just omit adding the salt later.
- 1 Teaspoon of Vanilla – Pure vanilla extract adds that little extra depth of flavor. You don’t actually taste it in many dessert recipes, but you’d notice it if it wasn’t there!
- 1/4 Teaspoon of Salt – Just a pinch, to help balance all the sweetness.
- 16 Ounces of Mini Marshmallows – You need a full 16 ounce bag of mini marshmallows, but you’ll want to divide out 2 cups! This is because you’re not going to be melting them all at once. It’s a trick to soft Rice Krispie treats! Most of them will be melted to be the “glue” of the Rice Krispie treats, but the rest will get stirred in separately to help keep the mixture soft.
- 6 Cups of Rice Krispies Cereal – You can’t make Rice Krispies without, well, Rice Krispies! Although I bet Cocoa Krispies would taste delicious in this recipe as well.
- 1 1/2 Cups of Graham Crackers – How does someone measure out cups of graham crackers? By breaking them up! Break off chunks of graham crackers small enough to be easily bite-sized.
- 1 Cup of Chocolate Chips – Because there’s so much sweetness in this perfect dessert already, I like to use semisweet chocolate chips rather than milk chocolate. You still get that delicious chocolate flavor, but you’re not hit over the head with richness!
How To Make These Gooey Rice Krispie Treats
I love classic Rice Krispie treats, because they come together so easily!
The addition of graham crackers and chocolate chips doesn’t change that one bit.
- Prep your baking pan by lining it with parchment paper. Quick tip! – if you give the bottom of the pan a quick spritz with cooking spray, it will help keep the parchment paper from shifting!
- Melt butter in a large pot over medium-low heat.
- Set aside 2 cups of marshmallows for later, and add the remainder to the butter. Keep stirring the marshmallow mixture until smooth. Take care not to overheat it.
- Remove the melted marshmallows from the heat, and add vanilla and salt.
- Gently fold in the Rice Krispies cereal, 2 cups of mini marshmallows, broken graham crackers, and semi-sweet chocolate chips until everything is evenly distributed.
- Spread the sticky cereal mixture in a even layer inside the baking sheet. A rubber spatula is helpful for this.
- Add your toppings – Below are some ideas for you!
- Let the Rice Krispie treats cool for at least 30 minutes, and then cut into squares and enjoy!
How To Top Delicious S’mores Rice Krispie Treats
Of course, you have those yummy s’more ingredients running all throughout this gooey treat, but presentation matters.
And if you can bump up the wow-factor while also adding some favorite flavors? Well, that sounds like a good idea!
- More Marshmallows! – If you’ve got some extra mini marshmallows still hanging out in the bag, toss them on top of the Rice Krispie treats.
- Graham Crackers – It wouldn’t be s’mores without that graham cracker flavor! You can use more broken up graham cracker pieces, but you could also use Teddy Grahams or Golden Grahams cereal. Or go for a dusting instead by using crushed graham crackers!
- Chocolate Chunks – I use fun-size Hershey’s chocolate bars for this, cut in half or in quarters to make them more manageable as a topping. But you can also make your own chopped chocolate, or reach for a bag of dark chocolate or milk chocolate chips.
My Top Tips For Perfect Rice Krispie Treats
- It can be hard to get all of the graham cracker pieces, chocolate chips, and unmelted marshmallows to distribute evenly throughout the Rice Krispie mixture. It gets to be really thick! What seems to work best is to add half of the rice cereal to the melted marshmallow, stir all of the add-ins in until they are evenly combined, and then add the rest of the cereal.
- Resist the temptation to press the mixture into the pan too tightly! You need to have a really gentle touch at that stage in the recipe, or your dessert will come out compact and hard.
Storing Leftover S’mores Rice Krispie Treats
This twist on the classic treat is best enjoyed the day you make it.
They’re so yummy, it’s unlikely you’ll have leftovers anyway! But if you do, all you need to do is place the leftovers in an airtight container and leave them on the countertop.
They’ll stay soft and delicious at room temperature for up to 2 days.
We often pop leftovers in the fridge without a second thought, but not so fast!
Putting leftover Rice Krispie treats in the fridge will cause the marshmallow and butter mixture to harden, and nobody likes eating hard Rice Krispie treats.
If your s’mores dessert does get hard, however, you can easily soften them up again.
Reheat them in the microwave for 5 to 10 seconds, and they’ll be gooey and perfect again.
