Making The Blondies

  • 1/2 Cup of Butter – Use unsalted butter if you can. It allows you to tweak the amount of salt you use in the recipe. Only have salted butter in your fridge? Just omit the salt as a separate ingredient.
  • 1 1/3 Cup of White Chocolate Chips – You’ll melt these down and they will give such a lovely deep richness to the flavor of your blondies!
  • 2 Eggs – The 2 large eggs will take on the moist air during whipping, and incorporate best into the batter as a whole, if you set them on the counter and let them come up to room temperature before you get started!
  • 1/3 Cup of White Granulated Sugar – Sugar adds both sweetness and moisture. Some blondie recipes use brown sugar instead, and it does give a nice caramel flavor. However, we’re trying to imitate a birthday cake! So instead, we’ll use white sugar and save the brown sugar for a different blondie day.
  • 1 Teaspoon of Vanilla Extract – You have some options here, if you’d like! Should you use real or imitation vanilla extract? Real vanilla extract will give you that robust vanilla flavor, but imitation vanilla is going to get you closer to the flavor of Funfetti cake mix. It’s up to you!
  • 1 Teaspoon of Almond Extract – If you don’t have this in your pantry, no worries. Most grocery stores carry it. If someone in your group has an almond allergy, you may be able to consider using imitation almond extract.
  • 1/2 Cup of Flour – All-purpose flour works the best for this recipe! If you have the option, use unbleached flour. Flour does have a taste, and unbleached flour gives a nice natural flavor to your birthday cake blondies.
  • 1 Teaspoon of Salt – You don’t need much, but it balances out the sweetness well!
  • 1/4 Cup of Rainbow Sprinkles – Birthday sprinkles make these blondies super fun! Definitely use rainbow birthday sprinkles, rather than colored sugar sprinkles. They’ll melt and bleed into your blondies while they’re in the oven.

Preparing the Frosting

  • 3/4 Cup of Butter – Make sure to set this measure of butter out on the counter to come to room temperature beforehand. You’ll never be able to make buttercream frosting if your butter is still fridge firm.
  • 3 1/3 Cup of Powdered Sugar – You’ll use quite a bit, but the powdered sugar has a lot of moisture to balance out!
  • 1 Teaspoon of Vanilla Extract – Just a splash.
  • 4 Tablespoons of Heavy Cream – The “cream” part of buttercream frosting. You can use milk, if you’d prefer.
  • Pink Food Dye – Wanting to use a different color? No worries! It’s your birthday creation – you choose the color.

  • Rainbow Sprinkles – Because when it comes to birthday cakes, presentation matters.

How To Make This Cake Batter Blondie Recipe

It may seem like a lot of steps, but don’t worry!

Most of this is just the order in which you’ll need to add the different ingredients.

Let’s go!

  1. Preheat your oven to 300 degrees Fahrenheit and prep your baking dish by lining the bottom of the pan with parchment paper.
  2. Melt your butter and white chocolate chips together. You can do this in a double boiler, or using a microwave and a microwave-safe bowl. Whichever method you use, be sure to stir it regularly to keep the sides and bottom from burning.
  3. In a separate bowl, use a hand mixer to whip the eggs until they are foamy. The air you beat into these eggs are your only leavening agent, so don’t stop until they are unmistakably foamy.
  4. Add the sugar, vanilla extract, and almond extract to your eggs, and mix until combined.
  5. Pour the butter and chocolate into the egg mixture, and again, mix until combined.
  6. Add the salt and flour to your wet ingredients. Fold these dry ingredients in slowly, until just combined.
  7. Add sprinkles and fold in until evenly incorporated.
  8. Pour the cake batter into the pan, and bake in the preheated oven for 25 minutes.
  9. While the blondies are baking, make your buttercream frosting! Begin by mixing together the softened butter and powdered sugar until well combined.
  10. Add vanilla and heavy cream to the butter mixture, and mix until smooth.
  11. When you reach the desired frosting consistency, add a couple drops of food dye.
  12. Once the blondies are baked and cooled, frost them and add sprinkles on top!
  13. Use the parchment paper to help remove the blondies from the pan, cut into squares, and enjoy!

My Top Tips For Perfect Blondies

These two tips will make sure your birthday blondies are tip top!

  1. Make sure the melted butter and chocolate mixture has had a moment to cool down before you add it to the sugar and egg mixture. Otherwise, the heat will melt and dissolve the sugar, and this messes up the texture of the blondies.
  2. Don’t overmix the flour! You’ll have been beating the eggs thoroughly, and there’s a tendency to keep that up when you go to add the flour and salt. However, you simply want the ingredients to be evenly incorporated – Try not to get too carried away on this step. Overmixing will start the develop the gluten in the flour (similar to when you knead bread), and then results in blondies that are more similar to cakes in texture than brownies. We want this dessert to taste like cake, but have a fudgy and chewy consistency!
