  • 1 Batch of Sugar Cookie Dough – Get a roll of premade sugar cookie dough. Of course, you could always make your own, and I’ll provide a recipe for that below, but it’s nice to know that you can make this recipe super quickly if needed.
  • 1 Tub of Cool Whip – This serves as your “pizza sauce”.
  • Your Favorite Fruits – Whatever assortment of fruits you like is fine. It can be mandarin oranges, kiwi, fresh berries… the options are endless!

How To Make This Sugar Cookie Fruit Pizza Recipe

  1. Press your sugar cookie dough into a 14-inch pizza pan or a 5×7 inch baking sheet. You can also use a 12-inch pizza pan, if you’d like a thicker sugar cookie base.
  2. Bake the cookie sheet until golden brown. (Follow package instructions.) After you take it out of the oven, let it cool completely – otherwise it will melt your whipped cream.
  3. Use an offset spatula to spread a thick layer of Cool Whip across the soft sugar cookie crust.
  4. Slice your favorite fresh fruit, and arrange the fruit slices in whatever design you desire.

Slice and enjoy!

However, there are other options you can try.

  • Cream Cheese Frosting – Using a luscious cream cheese frosting can help satisfy a sweet tooth. Blend together sweet cream cheese, butter, powdered sugar, and vanilla extract.
  • Vanilla Greek Yogurt – For a sugar-free, low calorie diet option, simply spread a thick Greek yogurt over the sugar cookie base.
  • Homemade Whipped Cream – You can make your own whipped cream using heavy cream, vanilla extract, and powdered sugar – and an electric mixer, or your arms will be burning.

A roll of sugar cookie dough is one of the best bases for a colorful fruit pizza, but it’s not the only one.

  • Chocolate Chip Cookie Dough – Swap out the sugar cookie dough for chocolate chip cookie dough. This makes for a decadent dessert, perfect for Valentine’s Day. Use a frosting of your choice, and top with drizzled chocolate and sliced strawberries.
  • Shortbread Dough – If the sugar cookie base is too sweet for you, switch to the dough you’d use to make traditional shortbread cookies.
  • Smaller Sizes – Instead of making a large pizza, roll dough into smaller circles, perhaps 5 inches or so in diameter. This makes a mini fruit pizza in the perfect single serving size.

Best Fruits For Topping Your Fruit Pizza Cookies

Most fruits work great for topping this summer dessert.

Some should be avoided – such as watermelon (it’s so full of water that it will make your crust soggy) and bananas (unless you plan to serve immediately!).

Other than that, the opportunities are endless.

  • Grapes – This one is fun because you have two colors to use when making your design.
  • Kiwi
  • Plums
  • Cantaloupe – Be sure to cut them into nice thin slices.
  • Apples – Use a little lemon juice to keep them from browning.
  • Peaches
  • Mangoes
  • Mandarin Oranges
  • Pineapple – If you use canned pineapple chunks, you should cut each chunk into smaller pieces.
  • Fresh Summer Berries – Any of the berries work great, like blueberries, raspberries, strawberries, and blackberries.
  • Lemon Zest – Whole lemons would be too sour for this sweet dessert, but grating lemon zest over the top would be perfect.

There really is no right or wrong way to top your Cool Whip or cream cheese layer with fruit.

But if you need some ideas, I’ve got your covered:

  • Use strawberries and blueberries for Memorial Day or Fourth Of July gatherings.
  • Make a rainbow pattern using a fruit for each color of the rainbow.
  • Use yellow and orange fruits to make a sunburst design.
  • Make an animal – butterflies are especially fun!
  • You can use small cookie cutters to cut the firmer fruits into shapes (apples, kiwis, etc.).

A Simple Recipe For Homemade Sugar Cookie Dough

I like this fruit pizza recipe because it’s quick, simple, and requires almost no clean up following.

However, if you have the extra time, it would taste fantastic using this favorite homemade sugar cookie recipe.

  1. Cream together 2 cups of sugar and 1 cup of butter in a large mixing bowl.
  2. Add 2 eggs, 1 teaspoon of baking soda, 1/2 teaspoon of salt, 1 teaspoon of vanilla, and 1 cup of sour cream.
  3. Add flour until the dough is somewhat stiff – you’ll be the best judge of this.

It’s easiest to roll out the dough if it’s been slightly chilled first.

So wrap your “pizza dough” in plastic wrap and pop it in the fridge for 10 minutes or so.

Storing Leftover Fruit Pizzas

It’s best to eat your fruit pizza immediately, because many fruits start to get brown not too long after cutting, or their juices will start to get all over the whipped cream.

However, you can absolutely save leftover fruit pizza to eat next time, or even make the entire dessert ahead of time to serve the next day.

Simply cover the pizza with plastic wrap and store it in the fridge.
