Several years ago, my Granny gave me a few different recipes for Cake Mix Cookies, and from that batch of ideas, these Cake Mix Lemon Cookie Ice Cream Sandwiches were born.

- One Box of Lemon Cake MixĀ – Cake mixes create moist cookies with a slightly crisp exterior and soft chewy inside. The cake mix has all of the dry ingredients you’ll need, mimicking a regular cookie recipe. The dough will be a bit more wet than a typical cookie recipe.
- 2 EggsĀ – For best results, be sure to use room temperature eggs. Egg whites can take some time to break down and incorporate into the batter. Starting with room temperature eggs will greatly speed up the mixing process.
- 1/2 Cup of Vegetable OilĀ – You can use other types of oil – just be mindful of the flavor they might add. Vegetable oil, canola oil, and grapeseed oil have neutral flavors. You can also use melted butter. Allow the melted butter to cool down slightly before mixing into the eggs, or you’ll accidentally cook the eggs.
- Vanilla Ice CreamĀ – You can’t make ice cream sandwiches without ice cream. For classic ice cream sandwiches, use vanilla ice cream.
How to Make Lemon Ice Cream Sandwiches
This recipe for lemon cookie ice cream sandwiches is as easy as making the lemon cookies and turning them into ice cream sandwiches.
Here’s how to do it!
- Preheat your oven to 350 degrees Fahrenheit, and then line a cookie sheet with parchment paper.
- In a large bowl, or in a stand mixer using a paddle attachment, mix together the eggs and vegetable oil until the eggs have broken down completely.Ā
- Add the cake mix and continue to stir until well incorporated. Be sure not to overmix.
- This dough is going to be pretty sticky. To make it easier to handle, I would suggest popping it in the refrigerator for about half an hour. It’s not necessary, but it may be helpful.
- Make dough balls that contain 2 tablespoons of cookie dough. You can use a small cookie dough scoop to help you with this. Place each of the 2-inch balls evenly on the lined baking sheet.
- Bake the lemon sandwich cookies in your preheated oven for 10-12 minutes. Like all cake mix cookies, you’re not looking for a golden brown color to let you know they’re finished. Once they’ve finished in the oven, let them continue to cook residually on the hot pan for 5 minutes.
- You can’t add the ice cream until the cookies cool. So after the 5 minutes of pan cooking, speed the rest of the process up by moving the cookies over to a cooling rack.
- Flip one cookie over, add a scoop of ice cream to the bottom of the cookie, then place a second cookie on top. Voila! A lemon ice cream sandwich! Enjoy immediately, or wrap up in parchment paper to store in the freezer for later.
Storing Leftover Homemade Ice Cream Sandwiches

So you could turn as many of them as you’d like into ice cream sandwiches and then place the leftover cookies into an airtight container.
The next time you want a lemon cookie, it’ll be there for you – as long as it’s within the next 3-5 days.

Some Troubleshooting for Perfect Cookie Ice Cream Sandwiches
Has anyone else noticed that the amounts in premade cake and cookie mixes continue to change?
Some brands have gone from 15.25 ounces of cake mix in their boxes to 13.25 ounces.
Cake mix cookies are intended to make a sticky batter, but if your cookie dough is wetter than you can manage, there are few things you can do to help.
- Add a package of lemon pudding or lemon curd mix.
- One tablespoon at a time, add powdered sugar to the batter.
- Use cool whip instead of vegetable oil.
- Spread the cookie dough out flat on the baking tray, baking the dough as a sheet instead of individual cookies. Then you can cut them into rectangles, like store bought ice cream bars.
