Turkey & Havarti Croissant Sandwich
This Turkey and Havarti Croissant Sandwich is the perfect sandwich to make with Thanksgiving turkey leftovers!
Why You Need To Taste This Delicious Turkey Croissant Sandwich
- They look fancy! – Baked croissant sandwiches are the perfect way to take a regular lunchtime staple and make it seem truly special. Build these sandwiches on the mini croissants, and they’re dainty and fancy enough for tea parties!
- They use fresh ingredients! – No artificial flavors here! Buttery croissants, apricot jelly, fresh greens, thick slices of turkey, and melted Havarti cheese give you a meal that’s big on nutrients and flavor.
- They taste delicious! – Speaking of flavor, this is no ordinary turkey sandwich! Gone are the days where we make sandwiches with thin slices of deli meat and American cheese. This sandwich recipe ups the ante, combining the sweet flavor of a honey glaze with the tang of apricots, the creaminess of Havarti, and the slight smokiness of real turkey meat.
- They’re a great way to use leftovers! – I’m specifically thinking about that abundance of leftover Thanksgiving turkey! It’s a shame to let that delicious meat go to waste, but sometimes we run out of ways to present it. Add these tasty sandwiches to your post-Thanksgiving recipe routine, and you’ll have that turkey eaten up in no time.
- They’re light, but filling! – Isn’t it nice to have an option for lunch boxes that don’t make you feel heavy and sluggish afterwards, but still keep you full and satiated all the way to suppertime?

…but truly, the flavors of this sandwich all mingle so well together that you need to try it as written, at least once!
- 4 Large Croissants (or 8 Mini Croissants!) – Buttery croissants are the base of this turkey and cheese croissant sandwich. Whether you use large ones or small ones is entirely up to you! Over the years, our favorite croissants have come from Sam’s Club and Costco.
- 8 Slices of Havarti Cheese – Havarti cheese is arguably the best cheese to pair with turkey. Because turkey doesn’t have a strong flavor and is easily overpowered, mild cheese are oftentimes best with turkey.
- 16 Slices of Turkey – If you can, go to your deli counter and order thick slices of turkey, rather than using the packages of deli meat. You’ll get a great texture and a savory turkey flavor. Even better – use leftover turkey meat from Thanksgiving dinner.
- 4 Tablespoons of Apricot Jelly – The sweet tang of apricot jelly is a great addition to this turkey and Havarti sandwich. Sure, this might be a new ingredient for your kitchen, but just one taste of it and you’ll be adding it to your breakfast toast on the regular!
- 4 Tablespoons of Honey Mustard – Honey mustard is a popular choice of condiment for this type of sandwich, but Dijon mustard works similarly.
- 1/2 Cup of Arugula or Micro Greens – The crisp leaves of arugula or a handful of micro greens add a satisfying crunch. Baby spinach works well, too!
- 2 Tablespoons of Butter – This melted butter will be brushed over the top, helping the croissants take on a beautiful golden brown color.
- Everything Bagel Seasoning – This seasoning mix makes every sandwich better.
- Honey – A drizzle on top of the sandwich!
How To Make this Turkey & Havarti Cheese Croissants
Putting this turkey and cheese sandwich recipe together couldn’t be simpler!
A few extra touches here and there really make these croissant sandwiches pop.
- Preheat your oven to 350 degrees Fahrenheit, and prep your baking sheet with parchment paper or aluminum foil. It’s not much fun trying to scrape baked honey glaze off a baking sheet!
- Slice each croissant in half. Use a knife to spread one half with apricot jelly and the other half with honey mustard.
- On the bottom half of the croissant, place one slice of cheese, 4 slices of turkey, and a small handful of arugula or micro greens.
- Place the croissant tops back on top. Brush the top of the tasty sandwich with butter, sprinkle with Everything Bagel seasoning, and drizzle with honey.
- Place the sandwiches on the baking sheet and bake them in the oven for 5 minutes, or until the cheese has melted.
Storing Turkey Sandwiches
Once you’ve made your fantastic turkey + Havarti croissant sandwiches, you can wrap them up individually in plastic wrap or store them in an airtight container in the refrigerator for up to two days.
Why not longer?
Because the longer the sandwiches sit, the soggier the croissant will become from the sauces.
Nobody likes soggy bread!
You can also freeze these sandwiches.
You’ll need to leave off the arugula as it will wilt when frozen and thawed.
Leaving off that one ingredient, make the sandwiches, wrap them tightly in plastic wrap, place them in a freezer bag, and store them in the freezer.
They will last for 3 months!
Thaw them in the fridge overnight, and add your fresh greens when it’s time to eat.
Other Ways To Enjoy A Turkey Sandwich
There’s more than one way to make a turkey sandwich!
Using this recipe for a turkey + Havarti croissant sandwich as your jumping off point, go have fun in the kitchen and see what other flavor combinations you can come up with.
Here are a few ideas to get you started:
- Mix Up Meats – These flavors would work just as well with other types of meats, such as sliced chicken breast, bacon, roast beef, black forest ham, or salami.
- Add Veggies – Don’t stop with fresh greens! Add a tomato slice, pickles, cucumber slices, banana peppers, red onion, avocado, or fresh basil leaves.
- Cheese Change Up – Havarti cheese tastes amazing with turkey, but don’t let that limit you! Muenster cheese will give you a similar flavor. You could also try swiss cheese, goat cheese, blue cheese, parmesan cheese, or white cheddar cheese.
- Bread Basics – The flaky croissant make these turkey sandwiches seem fancy, but you could also build your sandwich on sweet Hawaiian rolls, focaccia bread, or ciabatta rolls.
- Heat It Up – Croissants become flakier when placed back in the oven, but there’s more than one way to heat up a hot turkey sandwich! Try using a panini press, or toast the cut sides of the bread on a buttered skillet over medium heat. It will add a nice crispy crunch!
