Instant Pot Smoked Sausage and Potatoes with Corn

Smoked Sausage and Potatoes with Corn is my husband’s favorite go-to comfort meal. Sure, it can be made in a Crock Pot Slow Cooker, but we usually use our Instant Pot to make this simple family recipe happen fast.

The first time we ever tried this quick and easy meal, we wrapped all of the ingredients in individual foil packets and tossed them on the grill. That was so tasty, convincing me this would be a delicious camping meal. On the grill or over a campfire, either would work!

Depending on the weather throughout the seasons where you live, cooking on the grill may not always feel like an option, but an Instant Pot (or a slow cooker) works anytime of year!

The ingredients list for this easy Instant Post sausage recipe is short. In fact, you may already have all the needed items on hand to make this one tonight.

Ingredients for Instant Pot Smoked Sausage Recipe

  • 1 of 2 Packages of Smoked Sausage – Any kind of Beef Sausage or Kielbasa works, too!
  • 4-5 Medium to Large Size Potatoes – Your favorite kind will do.
  • 1 Can of Corn – No need to drain.
  • 1 Stick of Butter – Use what feels right. ha!
  • I typically keep a variety of smoked sausage, Kielbasa sausage, etc. on hand in our extra freezer.
  • Our pantry is usually fully stocked with plenty of corn.
  • I always try to keep potatoes on hand.
  • As for the butter, you know there’s always a good bit of that on hand around here.

Step-by-Step Instructions for Making this Instant Pot Smoked Sausage and Potatoes with Corn

Go ahead and start pre-heating your Instant Pot. It took me awhile to get in the habit of preheating while I was prepping. In my early days of using an IP, I wasted lots and lots time because I would forget this important beginning step.

Begin by slicing the meat. If you have little ones in the house, consider cutting each slice of meat in half or possibly even in quarter-size pieces.

Next, it’s time to dice the potatoes. For this recipe, yellow potatoes are our spud of choice. Baby red potatoes are also a top-pick for this easy dinner recipe. What kind of potato does your family prefer?

A great cutting space (I love a wooden cutting board!) and a sharp kitchen knife makes prepping this recipe a breeze!

Add the meat and potatoes to your Instant Pot.

Next, add a can of corn. We usually choose a low-sodium canned sweet corn. For this recipe, we don’t drain the corn. The liquid serves as the cooking liquid for this recipe.

Not sure the liquid from your corn is going to be enough? Simply add a bit of cold water or low-sodium chicken broth / chicken stock to your pot. I promise you can’t ruin this recipe!

Now it’s time for the main event – the butter! You may feel we’ve added too much butter. Or maybe you think this recipe needs more. This important life decision is entirely up to you!

Optional Ingredients for this Recipe

This is also the step when we add about a teaspoon of fresh ground black pepper into the mix. If I have fresh garlic on hand, minced garlic is also a nice little extra to toss into this recipe. No fresh garlic on hand? Garlic powder works, too!

We don’t usually add any salt or garlic salt, but your family might like that addition. They may even enjoy a dash of cayenne pepper added to the pot.

Another delicious idea is to add diced or chopped white onion or sweet onion. The frozen chopped onions in the freezer section of the grocery store make it easy to toss a handful of onion into this recipe.

Your family might also enjoy the addition of red and green bell pepper. If I added that to this original recipe I make, I’d have indigestion for the next six months, but maybe your body cooperates better with peppers than mine does. ha!

Now it’s time to start cooking! We usually cook this on high pressure for 20-25 minutes.

More confident cooks typically choose to cook their Instant Pot concoctions in a bit less time than I do, but that’s usually the cooking time I set my IP to for this recipe.

When my pressure cooker is done working its magic, I usually go for the quick release and then begin serving it into bowls. I typically use a slotted spoon (or a serving spoon with holes) so I can drain excess grease or any extra liquid that might be in the pot.

This meal has so much flavor – I’m convinced all that butter is what makes it especially delicious. Truly, comfort food at its finest!

We typically skip the hot sauce, but we have friends who love a dash of hot sauce on top of their serving.

Variations of this Sausage and Potatoes Recipe

I have seen others try this recipe with fresh green beans (or canned green beans) used in place of the corn. We have never tried that idea, but it sounds delicious!

Another amazing sounding idea I’ve seen others try is to use jumbo shrimp in place of the smoked sausage. Actually, wait a second. Who says we can’t do shrimp and sausage together – tossed with Old Bay seasoning? I think I’m onto to something here… YUM! Next time, I think my whole family would enjoy an Instant Pot version of a Low Country Shrimp Boil.
