  • 2 Cups of Old-Fashioned Oats – Oats are a nutritious source of whole carbohydrates. Old-fashioned oats (sometimes labeled as rolled oats) work best. If quick oats are what you have on hand, use them! The texture will be slightly different, as quick oats are smaller, but you’ll get a similar effect.
  • 3/4 Cup of Creamy Peanut Butter – The natural creamy peanut butter adds protein and holds all the other yummy ingredients together. You can use chunky peanut butter if you’d like your snack bites to have a bit more bite to them. Have someone with a peanut allergy? Swap a different nut butter of your choice, such as sunflower seed butter, cashew butter, or almond butter!
  • 1/2 Cup of Mini M&Ms – You’ll definitely want to use the mini M&M candies for this recipe, even if you typically use the regular-sized M&Ms when your make monster cookies. They’re simply easier to work into the mixture in their smaller size.
  • 1/4 Cup of Mini Chocolate Chips – Just like mini M&Ms are best for making cookie balls, miniature chocolate chips are the right size as well. Feel free to swap to mini dark chocolate chips, if you’d like to balance the sweetness a bit.
  • 3 Tablespoons of Honey – A little extra honey adds a natural honey and pairs with the peanut butter to hold everything together.

How To Make No Bake Monster Cookie Bites

One of my favorite things about this delicious treat is how quick and easy it is to pull together. One cookie sheet and one bowl – that’s all you need!

  1. Prep your cookie sheet by lining it with a sheet of parchment paper.
  2. In a large bowl, simply add all of the ingredients and mix together well with a wooden spoon.
  3. Use a cookie scoop to scoop the dough into perfect bite sized portions, and roll each scoop into a tight ball. Place each of the monster balls on the baking sheet, and keep scooping and rolling until all of the mixture is used.
  4. Place the cookie tray in the fridge for 30 minutes to firm up a bit, transfer to an airtight container, and enjoy!

Here are some ideas to get you going.

A little secret, though – if you add more dry ingredients to your dough, start your process by stirring all of the dry ingredients together first, and then add your honey and peanut butter!

This helps you get all of the ingredients evenly incorporated throughout the mixture. 

  • Extra Sweetness – Have a sweet tooth or two to satisfy? You can boost the sweetness of these no bake energy balls by adding a tablespoon of pure maple syrup or brown sugar.
  • Extra Energy – The hearty oats are a great source of carbohydrates, but you can turn these snack bites into healthy energy bites by adding some seeds to the mix. Try flax seeds, pumpkin seeds, or chia seeds. They’ll also add a bit of a toothsome bite to the texture. Want to keep these extra ingredients hidden? Larger seeds can be blitzed in a food processor until they’ll blend in seamlessly with the oats.

  • Extra Protein – Peanut butter is loaded with protein, but why stop there? Make monster cookie protein balls by adding a scoop of your favorite protein powder. Vanilla protein powder tastes particularly yummy in monster protein balls.
  • Less Sweetness – Sometimes, all of the chocolate candies could use some salty flavors to balance them out. Add a little flaky sea salt. Alternatively, reduce the amount of chocolate add-ins by a small amount, and replace them with shredded coconut.

Storing Leftover Monster Cookie Dough Bites

While you can keep these no bake treats at room temperature, the peanut butter does start to get a bit messy as it warms up.

I suggest keeping your monster energy balls in the fridge in an airtight container.

They don’t ever get so chilled that they can’t be bitten into easily, and it’s nice to have a handy afternoon snack right in arm’s reach without worrying about sticky fingers spreading peanut butter residue all over the house!

You can store this perfect snack in the freezer as well, if you’d like.

Instead of placing the cookie sheet of cookie balls in the fridge to firm up, place them in the freezer.

You need them to freeze solid, so that they don’t stick together later.

After they’re frozen, transfer them from the cookie sheet to a freezer bag of other freezer-safe container, and pop them back in the freezer.
