Tuscan Chicken Pasta

I first spotted this Tuscan Chicken Pasta on Momfessionals, and I couldn’t wait to give this simple recipe a try!

While I don’t at all consider myself a food blogger, I do enjoy sharing down-to-earth recipes that REAL families would love.

My entire crew went wild over this Chicken Pasta, and I can’t wait to tell you how to make it!

Tuscan Chicken Pasta by This Little Home of Mine

Ingredients:

  • 3/4 box of angel hair pasta noodles
  • 1 lb. of boneless skinless chicken breasts (or chicken tenderloins)
  • 6-8 slices of bacon
  • 2 fresh garlic gloves [minced]
  • 2 cups of fresh diced tomatoes
  • 2 cups of fresh spinach
  • 1/2 cup of heavy cream
  • at least 1/2 cup of Parmesan cheese [shredded]
  • olive oil
  • salt and pepper

Step-by-Step Directions:

Step #1:  Season your chicken with salt and pepper, and then use your preferred method to cook it just right. This is where some of the olive oil comes in handy. You can do this step on your cook top or in your Crock Pot, but my meat is never more tender than when I cook it in my Instant Pot. Allow the meat to cool, then either cut it up – or shred it! (Or, if you’ve made it in your Instant Pot, watch it fall apart before your eyes!)

Step #2: Cook your bacon! My favorite way to make bacon is on a griddle. After allowing it to cool a bit, crumble it in to pieces.

If I really want to make things easy, I will complete steps one or two the night before or in the morning before it’s time to put this recipe together. It all just depends on what I have going on that day.

Step #3: Cook and drain your pasta noodles. (Angel hair is our favorite, but you may love a different kind.)

Step #4: In a little bit more olive oil, saute the garlic, tomatoes, and spinach, tossing in the heavy cream and most of your shredded cheese.

Step #5: Next, pour this amazing sauce over your cooked pasta noodles, and stir. This is where the magic happens!

Step #6: Top this dish with crumbled bacon and more Parmesan Cheese, and it is ready to serve!

After giving this recipe a try, we realized that there absolutely can not be too much bacon or too much cheese in this dish. Regarding there never being too much bacon or cheese: This is actually a life principle I have lived by for many years. So pile it on – ha!

We are a family of six, so we usually double these kinds of recipes! We usually want seconds, and we usually want leftovers. You, too? If so, join me in doubling up!

I have always made this recipe in the Crock Pot, but I’m hoping to try it in the Instant Pot. (Can you tell the Instant Pot has changed everything around here? In fact, I’m questioning everything about who I am. ha!)
