What Are Snickerdoodles Anyway?

If we’re trying to take the distinct flavors and texture of snickerdoodle cookies and rework them into a quick bread recipe, it can be helpful to know exactly what snickerdoodles are.

Snickerdoodles are cookies with a distinct crackled appearance and a cinnamon sugar coating. They are pure heaven paired with a cup of coffee!

Some say that snickerdoodles have a German origin and were originally called “schneckennudel”. So, when that comes up on Jeopardy, you’ll know!

In this snickerdoodle-inspired homemade bread, we want to emphasize a great cinnamon flavor.

Ingredients For This Tasty Snickerdoodle Bread Recipe

Here are all of the ingredients you’ll need to make this delicious bread.

  • Flour – I use all-purpose flour, but you can make this bread with other types of flour as well. You may need to adjust your ratio of dry ingredients to wet ingredients, depending on what flour you choose.
  • Baking Powder – The rise of the dough is thanks to baking powder and eggs.
  • Salt – Just half a teaspoon of salt is all you need.
  • Cinnamon – It is a cinnamon bread, after all!
  • Butter – Use unsalted, room temperature butter. You need it to be the right consistency to cream with the sugar.
  • Sugar – Cane sugar is the standard, but you can swap out for muscovado, coconut, demerara, or even brown sugar.
  • Eggs – Three large eggs are needed for this recipe.
  • Vanilla – Because every good baked good has some vanilla in it, right?
  • Sour Cream – If you’ve never tried putting sour cream in baked goods, this recipe removes all doubt. The sour cream makes this such a moist bread!
  • Cinnamon Chips – For an extra burst of cinnamon that really makes this bread say “snickerdoodle”, we’ll use cinnamon chips. They’re like chocolate chips, only made with cinnamon. You can find them in the baking aisle of most grocery stores. If you can find mini cinnamon chips, those work the best.

Simple Steps For A Delicious Snickerdoodle Loaf:

  • Cream Together – In a large mixing bowl (I like to use an electric mixer or a stand mixer), cream together softened butter, sugar, salt, and cinnamon. Slowly add eggs, then sour cream and vanilla.
  • Mix Dry Ingredients – In a separate bowl, mix flour and baking powder.
  • Combine – Add a cupful at a time of the dry mixture into the wet mixture, combining well.
  • Add Chips – Coat the cinnamon chips in flour and then carefully fold them into the batter.
  • Bake! – Pour the batter into the loaf pan of your choice, bake, and eat.

For Perfect Snickerdoodle Bread, Try These Tips!

  1. Be sure to set your butter out ahead of time so that it softens. If you forgot (and haven’t we all?), don’t microwave it. Softened butter and melted butter react in two very different ways when it’s time to bake. Instead, fill a bowl or measuring cup with boiling water, let the water sit in the bowl for a few minutes, then dump out the water and upturn it over your stick of butter. The residual heat will soften the butter to the perfect consistency in next to no time.
  2. Coat the cinnamon chips in flour before adding them to the mixture. This prevents the cinnamon chips from sinking to the bottom of the bread while it’s baking. We want the chips to be evenly dispersed throughout the loaf, for a burst of flavor in every bite.
  3. Don’t judge doneness by time or appearance alone. Always check that the very middle of the loaf is thoroughly baked by sticking a toothpick into the center. When you pull it out, if it comes out cleanly, then you’re good to go!
  4. For loaves that come out of the pan perfectly, dust the pan with flour after greasing it, and leave the bread in the pan for 10 minutes after baking before tipping it out on a wire rack to cool.

A Topping Option For An Extra Touch

Part of the appeal of snickerdoodles cookies is the crackled, cinnamon-sugar finish. You can recreate that on this snickerdoodle bread as well. Make a crispy cinnamon sugar crumble by mixing flour, brown sugar, cinnamon, and butter into a streusel and sprinkling it on the top. As the bread loaf rises and expands, it will create a crackly cinnamon topping.

How To Store A Leftover Loaf Of Snickerdoodle Bread

Whether you have leftover snickerdoodle bread that needs tucked away for tomorrow, or you’d like to make a batch of mini loaves to use as gifts, there’s a trick to storing breads so that they keep their moist softness.

First, you’ll wrap the loaf with a couple layers of plastic wrap. Then, if they’re headed to the freezer, cover the plastic wrap with aluminum foil and place it in a freezer-safe Ziploc bag. They’ll still taste fresh and perfect when you thaw them out up to two months later!

Planning for the leftovers to stay out on the counter? Then after you’ve wrapped it in plastic wrap, place it in any airtight container. You can enjoy those leftovers for up to 5 days.

  • 1 Oven


  • 2 1/2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 1 cup butter softened
  • 2 cups sugar
  • 3 eggs
  • 2 tsp vanilla
  • 1 cup sour cream
  • 1 package cinnamon chips
  • 2 tbsp flour


  • Combine 2 1/2 c flour and baking powder in a bowl.
  • Separately, cream butter, sugar, salt, and cinnamon until fluffy, about 2 minutes.
  • Add eggs, 1 at a time, mixing well after each.
  • Add vanilla and sour cream.
  • Slowly add dry mixture to wet mixture until just combined.
  • Coat cinnamon chips with 2 T flour. Stir into batter.
  • Spoon batter into greased mini loaf pans until 2/3 full.
  • Bake at 350 degrees Fahrenheit for 35-45 minutes.
  • Cool in pans for 10 minutes before removing to wire rack.
